Rice is a great thing to have in the cupboard and by adding a few extra ingredients can become a awesome meal all on its own.

 

For the base of this dish please bring

 

  • 1 onion, red or white it doesnt really matter.

  • 200g basmati rice.

  • 25g each of peas and sweetcorn. If you really dont like one go for 50g of the other, frozen peas and sweetcorn are cheap and a grand product.

 

To turn your dish into a Jambalya from the souther States of America you can bring 1 or more of the following.

 

  • 2 chicken breasts, chopped

  • 1 red pepper, thinly sliced

  • 75g chorizo, sliced

  • 1 tbsp Cajun seasoning

  • 400g can plum tomatoes

 

 

To turn your dish into a Paella from Spain you can bring 1 or more of the following.

 

  • roasted chicken breasts, skinned and torn into pieces

  • cooked prawns

  • squid rings

  • red peppers

  • 175g black olives

  • handful chopped fresh parsley

  • 1 lemon, cut into wedges

 

I will be providing herbs and spices to flavour these.
