No Meat with a mashy top

Producing meat is expensive, and that cost is passed on to us the shopper.

 

With that in mind it is always a good skill to rustle up dishes without meat. Not only is it kind to our pockets but a diet with plenty of veg is great for us in every way.

 

  • 300g potatoes

  • 300g sweet potatoes

  • 40g margarine

  • 1 onion

  • 2 carrots

  • 3 cloves of garlic

  • 2 sticks of celery

  • 350g mushrooms (if you can chestnut work well)

  • 1 x 400 g tin of chickpeas

  • zest of 1 lemon

 

I will provide, please bring 50p towards these ingredients.

  • Salt and pepper

  • 3 cloves of garlic

  • Ground corriander

  • 2 tbsp balsamic vinegar

  • 1 tbsp dried parslet

  • 1 stock cube to make 100ml stock

  • 30g breadcrumbs

  • 12 sun-dried tomatoes
